You upgrade to a plan with more credits. Your existing data and workspaces are never deleted.

Yes. You can upgrade or cancel at any time from your billing settings. When you upgrade, you pay the price difference and your billing cycle resets.
It's the number of workspaces Origami can run at the same time. On Starter you can run 1 at a time, on Pro 3 at once, and on Max 10 at once. You can always create more workspaces than this — the limit is only on how many run simultaneously.
